Zucchini Carrot Cheese Tart

zucchini carrot cheese tartI like cheese a lot, so I wanted to bake a tart with cheese and vegetables but I was too lazy to make a tart dough! So here is my recipe of the Zucchini Carrot Cheese Tart:

  • 1 puff pastry
  • 1 zucchini
  • 1 carrot
  • 1 egg
  • 25 g feta cheese
  • 3 tablespoons cream cheese
  • 3 tablespoons shredded mozzarella cheese
  • 3 tablespoons ricotta cheese (you can add cream cheese instead of ricotta)
  • herbs, black pepper, salt (if feta cheese is too salty for u then do not add much salt)

zucchini carrot cheese tartCut the zucchinis and carrots in long flat strips. Cook them in a double boiler about an hour. Then in another bowl add salt, pepper, 1 teaspoon white vinegar and 1 tablespoon olive oil on them.

zucchini carrot cheese tartPut your puff pastry on the tart pan. Bake it for 5 mins. Take it out.

In the meanwhile prepare the cheese mixture. Mix an egg, all the cheese, herbs, salt and pepper. Pour the mixture on the puff pastry. (When you take out the puff pastry it will be puffy, do not worry when you pour cheese mixture on it, it will deflate.)

Then add zucchinis and carrots. I rolled the vegetables like above, but you can decorated the way you want!

Put it in the oven with the temperature set at 170 degrees and bake it for 35-40 mins until it is nicely golden brown.
